A refreshing salad that combines the rich flavors of olive oil with fresh vegetables. Ingredients: 2 cucumbers, diced 2 tomatoes, diced 1 red onion, thinly sliced 1 bell pepper, diced 1/2 cup Kalamata olives 1/4 cup feta cheese, crumbled 3 tablespoons extra virgin olive oil 1 teaspoon dried oregano Salt and pepper, to taste Instructions: In a large bowl, combine the cucumbers, tomatoes, red onion, bell pepper, olives, and feta cheese. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper. Pour the dressing over the salad and toss gently to combine.
